Apple Pancakes

Making breakfast during the week can a rushed affair, stifling any creativity one may have. But, on the weekends, I love making Aaron some fun breakfasts, and he loves eating them, as evidenced by the half-bitten pancake in the picture. He took a large bit out of this as I stepped away for a second to grab my camera. This is a simple, easy, and delicious breakfast. In fact, Aaron said that it was one of the best breakfasts I have ever made him 🙂 Read on to get the recipe!
INGREDIENTS

Pancake mix
4-5 apples, peeled, cored, and sliced in round slices
1 cup lemon juice
1/3 cup sugar mixed with 2 tbsp cinnamon
powdered sugar (optional)
(adjust quantities as necessary. we halved this recipe.)

DIRECTIONS

Prepare the pancake mix as per package directions and set aside.

Peel and core the apples. Once the core is removed, slice the apples so you get the holes in the middle.

Toss them in the cup of lemon juice. This really amplifies the tanginess and balances the sweet. I sprinkled some sugar on top and let them soak for a few minutes. The longer the better, of course 🙂

Heat your pan or griddle to the desired level. Dip the apple slices in the batter, making sure both sides are covered well, and place in pan.

Cook till they are golden brown, and flip them over once so the other side can evenly cook.

Sprinkle the hot pancakes with the sugar + cinnamon mix, and some powdered sugar.

Eat them while hot! They taste so good with some honey as well. Enjoy!

(Aaron was eating them too fast for the powdered sugar and cinnamon sugar mix to make it onto the pancake long enough to take a picture. He did add this to his pancakes and ate them all before I was done with one of mine!)
