Banana Walnut Chocolate Chip Cookie Bread

I made two loaves of this recipe yesterday. We ate BOTH loaves of this bread yesterday. And now, Aaron insists I make some more for tomorrow and possibly a few dozen for ‘food storage’.  Recently, Aaron spotted a ‘good deal’ on bananas and came home loaded with several pounds of bananas that have reached their overripe stage simultaneously. So, to reduce the pile, I made some Banana Bars with Cream Cheese Frosting.  That was not enough to make a dent in it, really. So, yesterday, I found myself whipping up this recipe. It is best enjoyed with a glass of cold milk.
Here you go!

Ingredients:
  • 1/2 cup butter
  • 3/4 cup white sugar
  • 1 egg
  • 1 tablespoon milk
  • 3 very ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnut pieces
Method:
  1. Preheat oven to 350 degrees and lightly grease the loaf pans. (I used two small loaf pans because the large one takes too long to cook and I was too impatient.)
  2. In a large bowl, cream together butter and sugar until light and fluffy. Then, stir in the egg, beating well. Next, toss in the milk and bananas. Stir for a minute or so. 
  3. Add the flour, salt, baking powder and baking soda. Stir just enough to combine evenly. 
  4. Bake at 350 degrees for about 40 minutes until a toothpick inserted in the center of the loaf comes out clean. 
  5. Cool the loaf in the pan for about 15 minutes before removing to cool it completely.
