I made two loaves of this recipe yesterday. We ate BOTH loaves of this bread yesterday. And now, Aaron insists I make some more for tomorrow and possibly a few dozen for ‘food storage’. Recently, Aaron spotted a ‘good deal’ on bananas and came home loaded with several pounds of bananas that have reached their overripe stage simultaneously. So, to reduce the pile, I made some Banana Bars with Cream Cheese Frosting. That was not enough to make a dent in it, really. So, yesterday, I found myself whipping up this recipe. It is best enjoyed with a glass of cold milk.

Ingredients:
- 1/2 cup butter
- 3/4 cup white sugar
- 1 egg
- 1 tablespoon milk
- 3 very ripe bananas, mashed
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup chopped walnut pieces
Method:
- Preheat oven to 350 degrees and lightly grease the loaf pans. (I used two small loaf pans because the large one takes too long to cook and I was too impatient.)
- In a large bowl, cream together butter and sugar until light and fluffy. Then, stir in the egg, beating well. Next, toss in the milk and bananas. Stir for a minute or so.
- Add the flour, salt, baking powder and baking soda. Stir just enough to combine evenly.
- Bake at 350 degrees for about 40 minutes until a toothpick inserted in the center of the loaf comes out clean.
- Cool the loaf in the pan for about 15 minutes before removing to cool it completely.
