This simple and nutritious salad was ready in less than 15 minutes! This morning, I knew I did not have much time to get lunch prepared for Aaron before he left for work. That was mostly due to the fact that I was working on something yummy for the blog for later in the day. So, while he had breakfast, I threw this delicious number together and it was ready right when he finished breakfast.
With only a few ingredients, you can whip up this salad in no time.
INGREDIENTS
2 cups salad greens – spring greens, spinach, or whatever combination of salad greens you prefer.
1 cup dried cranberries
1/2 cup honey goat cheese ( I thought I had picked up plain goat cheese and found out when I got home that it was honey goat cheese. I was pleasantly surprised when I tasted it and really liked how it made the salad pop. However, you can use plain goat cheese as well.)
1/2 cup walnuts (your choice)
1 chicken breast or thigh
1/2 tsp garlic powder
salt and pepper
Any salad dressing you like. I had some leftover lemon dressing from a summer pasta salad I had made over the weekend, so that is what Aaron got 🙂
DIRECTIONS
Toss the salad greens in a bowl along with the cranberries and walnuts.
Place chunks of honey goat cheese all around on top of the greens.
Pour a tiny bit of olive oil in a pan on medium heat. Place the chicken piece in the pan. Season with garlic powder, salt and pepper on both sides. Once cooked, place it on a cutting board and slice it in long strips.
Place them on top of the salad mixture, drizzle your dressing, toss your salad, and only mumble when people talk to you while you are busy eating this salad.
