Homemade Apple Pie

I will have to agree with Jane Austen on this point. It was a considerable part of my domestic happiness and my stomach was equally happy. 
So happy, in fact, that I devoured the entire pie minus one last piece that Aaron snagged before I inhaled that too. If you know me, you will also know that I am not a fan of sweet, sugary things. I can make them and have a piece or so, but I am not tempted by anything sweet. 
I have no idea what came over me. I am convinced that my sweet tooth made a surprising entrance that day and I could not stop myself from eating this pie! I am glad to report it has since retracted and I have gone back to my non sweet-eating days.

Ingredients

  • 1 whole Pie Crust
  • 6 cups (to 7 Cups) Peeled And Sliced Granny Smith Apples
  • 1/2 whole (juice Of) Lemon
  • 1/2 cup Sugar
  • 4 Tablespoons Flour
  • 1/4 teaspoon Salt
  • 1/2 cup Flour
  • 1-1/2 stick Butter
  • 1 cup Brown Sugar
  • 1/2 cup Quick Oats
  • 1/4 teaspoon Salt
  • 1/2 cup Pecans, Chopped
  • 1/2 jar (or More) Caramel Topping

Method

In a bowl mix peeled apples, lemon juice, sugar, flour and ¼ teaspoon salt. Set aside. For crumb topping, cut the butter into the flour with a pastry cutter, then add in brown sugar, oats, and ¼ teaspoon salt.
Add apples to prepared pie shell and top with crumb topping. Cover crust edges with aluminum foil and bake in a 375 degree oven for 25 minutes. Remove foil from crust and place back into the oven for another 30 minutes. Chop pecans, and when five minutes remain, sprinkle them over the pie. Finish baking. 
Remove the pie from the oven and pour ½ jar (or more, if you’re feeling dangerous and naughty) of caramel topping over the top. Allow to cool slightly before serving, or don’t if you can’t wait. Eat. Enjoy.

I did not have pecans, and because I don’t like things really sweet, I skipped the caramel topping. 
But that did not stop me from inventing excuses to go into the kitchen every twenty minutes to grab a forkful and shove it in my mouth. 
Make this at home, and you will find yourself gravitating towards the pie plate with no encouragement from anyone. 
Most of all, just do it in the name of domestic happiness.
