Mexican Omelette

This was so easy to make. 
2 eggs, beaten (I added milk to make it a bit fluffy.)
1 tomato, chopped 
1 medium onion, diced
Shredded Mexican Cheese – you can add as much as you desire.
Ground pepper
Salt
1/2 teaspoon cumin
Cilantro for garnish
Heat oil in pan, swirl around to coat entire pan. 
Pour in the beaten eggs. Let it cook for a minute or two.
Sprinkle the onions, tomatoes, cilantro, cumin. 
Then throw in the cheese, and gently fold the omelette. If you like it folded.  
If not, then once cooked thoroughly, slide it onto a plate. Cut some avocados, and add some sour cream, and Voila! 
Enjoy.
